Here are full details of courses for the coming year and how to book. Because there are many more courses this year, they are in sections.

Courses start at 10am with coffee, include a delicious vegetarian lunch and finish shortly after 3pm except the Milling Course which finishes at 4pm.
Children's courses are shorter (and cost less - usually £10per child) starting at 10am and finishing at 12.45pm.

BAKING AND COOKING COURSES

 

Our very successful regular courses continue, and are listed further down the page, but, for those of you have been to these once, twice, or more often, and, of course for everyone else, here are some new ones to try :

Hedgerow Cooking

What to do with the harvest of fruit and berries - crab apples, elderberries, rosehips and sloes. We will make jams and jellies, a pud or two and maybe some gin!

Apple Cooking

This is the time of year when there are baskets and boxes of apples of all different varieties and colour in many larder and sheds. We will make scones, a cake, biscuits and a tart - all full of apples..

Old Favourites.

 

Start the new year by putting some spring in your dough! We are running some of the most popular bread-making courses, especially for people who have only just heard about the Watermill Baking Courses, or who have been meaning to get round to coming and haven't quite made it yet. We will try to run extra ones if there is sufficient demand, so if you can't get to any of these, don't worry, just let us have your name and address and we'll keep in touch. The courses are an excellent way of learning more about baking and cooking using as many organic ingredients as possible.
These will be run by Ana Jones. Here she introduces the different courses:

Breadmaking

Making bread only takes a few minutes, so do you really need a breadmaker? If yes, see below! This course is for those who want to learn from the beginning or find out how to make better bread. Ana will demonstrate breadmaking and talk about flours and the milling process, and then everyone will make their own bread to take home and will then be able to make excellent bread! There will be a guided tour of the Mill - the more that you learn about flour and milling the more interesting it all becomes!

More Breadmaking!

Once you are confident in your skills we can move on to look at other methods like the No Knead Grant Loaf. We will explore how possible it is to make a sourdough plant using natural yeasts; and make wheat-free and lower gluten bread with flours like Miller's Magic, Rye and Barley.

Pastrymaking

Lots of people think making pastry with anything other than fine white flour is impossible. It isn't, and in this course we will make simple pastry with 100% wholewheat flour, quiches, as well as jam tarts, sweet, choux and hot water pastries for all occasions.

Soupmaking

Home-made soups are delicious and very easy to make once you know what you want to do. We will discuss different soups and what ingredients go together before we make some for you to try.

Vegetarian Cooking

Many more people would like to make tasty and easily prepared vegetarian meals. This is an introduction to the wide variety of ingredients - and what to do with them. We will all make some savoury dishes for lunch and then, having been busy cooking, we'll finish with a feast! Ingredients and recipes will vary depending on the time of year.

Seasonal Salads

People often get a bit stuck with salads, but they can be exciting and fun to make and very appealing to look at. We will make some seasonal salads to get you going, and discuss other ideas of what would go together, including grains, pulses, nuts and seeds, so you can experiment for yourself at home. We will also make salad cream and some dressings.

Christmas Baking and Mulled Wine

All the inspiration you need to start your Christmas preparations. We will make a very tasty Christmas cake and mince pies - not too sweet, but all full of fruit. We'll look at different ways of decorating the cake and add chocolate florentines, along with mulled wine, so be prepared for a delicious day's cooking and tasting!

Willow Christmas Decorations with Phil Bradley

Get into the Christmas spirit with Phil Bradley and enjoy creating your own unique willow Christmas decorations in warm and homely surroundings, complete with a delicious vegetarian Christmas lunch.

BOOKING - HOW MUCH DOES IT COST AND HOW DO I BOOK?

Baking courses are for 6-8 people. We can arrange special courses for groups. We book on a first-come, first-serve basis so if there is only one date when you can come please book as soon as possible.

The cost of the day courses will be £55.

Please ask for details of local accommodation if you would like to stay overnight. Prices include VAT.

NB Children's Courses cost £10 per child per course. Courses that run over two mornings cost £20. Adults accompanying younger children pay the same amount as each child.
